Now It’s Easy to Eat Green

The recently released 2015-2020 Dietary Guidelines for Americans serve as yet another reminder that the majority of us could be consuming more servings of vegetables. A surprising 87 percent of Americans fail to eat enough vegetables to meet these recommendations, with the average adult getting less than two servings per day. The new guidelines include recommendations about what components should be limited in a healthy diet. At the top of this list are saturated fats, trans fats, added sugars, and sodium. While many adults struggle to eat enough greens, for teenagers and children, it’s an even bigger dilemma. These younger consumers often forgo eating fruits and vegetables entirely and instead replace them with high-calorie junk foods, snacks, and sodas. Lettuce Wraps with Chicken and Avocado

INGREDIENTS: 1 lb. Chicken breast tenderloins 1 large head butter, bibb or Boston lettuce, washed, dried and leaves separated 2 large avocadoes 1/2 cup natural salsa 1/2 teaspoon Pink Himalayan salt 1/2 teaspoon black pepper 1/2 teaspoon garlic powder 1 tablespoon coconut oil DIRECTIONS: 1. Wash, dry and separate the leaves of 1 large head of Boston, bibb or butter lettuce. I used Boston lettuce but any large leaf lettuce that you enjoy will work. Set aside. 2. Pat chicken tenders dry. Season chicken breast tenderloins with garlic powder, salt and pepper. Add coconut oil to very hot skillet and then add chicken. Chocolate Peanut Butter Protein Cups

Ingredients: 3/4 cup chopped IsaDelights in Milk Chocolate 2 tbsp IsaLean Shake in French Vanilla 3 tbsp organic peanut butter 1/4 cup PB2 1/4 cup unsweetened vanilla almond milk Directions: In a small bowl, combine IsaLean Shake in French Vanilla and PB2.  Add unsweetened vanilla almond milk and mix until smooth.  Then add peanut butter and mix until smooth. In a small pan, melt chopped IsaDelights over low heat. Add a small layer of melted chocolate to each of 8 silicone baking cups.  Place on a tray and into the freezer until hardened, about 15 minutes. To each baking cup, add a spoonful of peanut butter mixture and press lightly into the cup, leaving some space on the sides for the chocolate to fill in. 1 tsp olive oil 2, 4oz filets of salmon 3 tsp IsaCrunch® hulled hemp seeds Pinch of cinnamon ¼ tsp salt Dash of pepper Brush filets with olive oil. Easy Refrigerator Dill Pickles

INGREDIENTS 10-12 pickling cucumbers 4 cups water 2 cups white vinegar 2 tablespoons kosher salt 1 teaspoon sugar big bunch of dill 1 head of garlic, skins removed, cloves smashed (less if its a strong garlic) 10 peppercorn kernals INSTRUCTIONS Slice cucumbers into 1/4 inch slices or spears. Set aside To make brine, combine water, vinegar, salt, and sugar in medium sauce pan. Bring to a boil and swirl to make sugar and salt dissolve. Remove from heat and cool to room temperature. Add cucumbers to jars. Do not pack them super tight as you you’ll want room for the brine. Add the fresh dill, smashed garlic, and peppercorns to the jars.
